Fairmont Classic Cocktail Launch

Fairmont Hotels & Resorts now invites guests to taste what happens when elite mixologists from around the world come together to craft cocktails.

Classics. Perfected., Fairmont’s new global cocktail menu, offers a selection of beautifully balanced cocktails created by newly-appointed Fairmont Tastemakers.

Selected for both individual talent and mastery of cocktail methodology, Fairmont’s Tastemakers (in a two-year program) include Grant Sceney from Fairmont Pacific Rim, Nader Chabaane from Fairmont Le Château Frontenac, Erik Lorincz from The Savoy, A Fairmont Managed Hotel and Tom Hogan from Fairmont Singapore.

“When people “meet for a drink” at one of our hotels – from The American Bar at The Savoy to The Plaza in New York – they expect the crispest gin and tonic and a truly perfect manhattan. With this new menu that is precisely what they will get – along with quality ice and bartender’s advice when appropriate,” said Jane Mackie, Vice President, Fairmont Brand.

“The Classics. Perfected., menu was curated by our top bartenders who were charged with helping us to discover and perfect the best old and new classics.”

Cocktail innovations in hotels have typically been the work of visionary bartenders working on individual specialties for guests’ sipping pleasure. For the first time, Fairmont has hand selected top bartenders from around the world to collaborate on cocktails, developed in partnership with Kathy Casey at her Liquid Kitchen Food Studios in June 2015.

The menu features three sections: most requested classics, revived classics and “neats”. Here’s a few of the cocktails off the Revivals menu, served in beautifully-crafted Schott Zwiesel crystal glassware:

Pomegranate Paloma
[Pomegranate Paloma: Casamigos Reposado Tequila, Cointreau, pomegranate, fresh grapefruit, lemon]

In certain areas of Mexico, the Paloma is ordered far more often than its cousin, the Margarita. In Mexico, this drink is made by simply combining Tequila and grapefruit soda; Fairmont’s version combines fresh grapefruit soda made with fresh-pressed grapefruit, simple syrup and soda water. Pomegranate adds a rich and tart modern flavour and flair.

Perfect Martinez
[Perfect Martinez: The Botanist Islay Dry Gin, Cointreau, sweet red vermouth, dry vermouth, bitters]

The Martinez was first recorded in 1884, and has become something of a cult classic since being rediscovered at the turn of this century. The “perfect” in this drink refers to equal portions of vermouth (as in a perfect Manhattan). Botanicals in the gin add layers of flavour that complement the two types of vermouth.

Right Word
[Right Word: Bombay Sapphire Gin, Lillet Blanc, St. Germain Elderflower Liqueur, fresh lime]

Fairmont’s take on The Last Word reigns as the Tastemaker favourite — a rediscovered classic cocktail first invented during Prohibition in Detroit. Elderflower liqueur and Lillet Blanc provide variation in a floral, elegant way (substituting traditional chartreuse), making for a light and refreshing cocktail.

Classics. Perfected., will be available at all Fairmont Hotels & Resorts in the Americas starting November 23, with a global rollout over the holidays.
