The Vancouver Community College Baking and Pastry Arts department is on their way to finishing what will be the most massive and colourful cake this city has seen in 125 years. Tomorrow, Vancouver will celebrate its 125th birthday and in honour of the event, seven 1/2 3-layer cakes (36″ x 80″) will be sliced into approximately 2,220 slices for the public to enjoy.
It was the VCC bakery department’s decision to bake a vanilla (white) cake instead of a chocolate cake. According to one of the instructors, most people tend to prefer a vanilla cake. Three instructors and 15 students are involved in this ambitious undertaking!
Here’s their list of ingredients for all three cakes:
– 862 eggs
– 19,000 grams sugar
– 24 lemons
– 12,600 grams flour
– 37.5 kg of lemon per cake multiplied by 3 = 112.5 kg total
and approximately 15 batches of butter cream!
When I visited the work room, the team had already invested 2 1/2 weeks of time into the stage they are currently at. The photos will give you an idea as to what can be expected tomorrow when the completed masterpiece is unveiled between 6 and 7 pm at Jack Poole Plaza.
