The summer weather’s been perfect for socializing on patios, particularly when that patio has a commanding waterfront view.
Last night, C Restaurant (an Ocean Wise-sanctioned city favourite) hosted a group of media for a special Hawkshaw salmon-specific tasting, along with champagne cocktails, watermelon vodka refreshers, and wine.
I enjoyed the Joie Farm Rose, a perfect match for the fresh, fragrant salmon bites that were served in a variety of creative ways.
Hawkshaw salmon comes from BC’s Skeena River and is named after Fred and Linda Hawkshaw. The Hawkshaws are able to secure this hard to find, fresh fish using “tangle net” technology, making this salmon one of the most environmentally friendly catches in the province.
As well, the fish arrives in Vancouver having been caught and later de-stressed. It also arrives cleaner than most fish, according to Chef Lee Humphries.
A typical journey from boat to table is about 48 hours, which gives the Hawkshaw salmon its beautiful colour and taste in the dishes we sampled.
